Right here is a very easy as well as to follow recipe for pomme rosti. Sous vide potato rosti is the perfect accompaniment for meat-based main courses but is also delicious when simply topped with a fried egg and served for breakfast or lunch. It is like Hash Browns on steroids.

In Switzerland, rösti means “crisp and golden,” it’s fun and easy to say (ROOSH-tee or RAW-stee) but it really refers to a dish of shredded potatoes (Pomme rosti) sauteed on both sides until—you guessed it—crisp and golden. The closest thing that is easy to imagine is McDonalds Hash Browns but don’t confuse those fast food spuds for what you can make at home. If you are not familiar with Swiss cooking, well, it is about 10 times as good as the best hash-brown potatoes you’ve ever tasted.

Preparing Pomme Rosti

1 Preheat a water bath to 176°F

2 Place the grated potato in a mixing bowl and season heavily with salt. Mix well, then transfer to a colander and leave to drain for 15 minutes. Place the potato in a clean, dry tea towel and wring out as much of the starchy potato water as possible
  • 4-5 lbs potatoes
  • salt
  • Optional additions to make the pomme rosti dish more unique would be to mix in other ingredients such as Leeks, Onions, Bell Peppers, Bacon, Cheese, Garlic, Etc,Etc. The possibilities are endless.
3 Place the potato in a mixing bowl. Melt the duck fat in a small saucepan, pour over the potato and mix well
  • 4oz of duck fat, plus extra for pan-frying

4 Transfer the mixture to a large vacuum bag, seal in a plastic bag or shrink wrap and cook in the water bath for 4 hours

 
5 Allow the pomme rosti to completely cool before removing from the vacuum bag and cutting into your preferred shapes
 
6 To finish the pomme rosti, pan fry the rösti in a little more duck fat until crisp and golden brown
